Let's Build This Pineapple! 🍍

Bake, Fill & Crumb Coat

Bake your cake in round pans — a tall, narrow cake works best to get that pineapple shape! Stack and fill your layers with buttercream, then apply a thin crumb coat all over the outside. Pop it in the fridge for 30 minutes to firm up before piping.

💡 Use a 6" round pan and bake 3–4 layers tall for the best pineapple proportions!

Make the Chocolate Leaves (Do This First!) 🍃

Melt your green melting chocolate wafers in the microwave in 30-second bursts, stirring between each until completely smooth. Pour the melted chocolate onto a sheet of parchment paper and spread it out into a thin, roughly rectangular layer — about 3–4mm thick.

Let it set at room temperature or pop it in the fridge for 10 minutes until completely hardened. Once set, peel it off the parchment and break or cut it into irregular leaf shapes — jagged, pointy edges look the most realistic and dramatic!

💡 Make these ahead of time — they'll keep for days at room temperature. Make more than you think you need so you can pick the best shapes!

Make Your Fondant Face Details 😊

While your chocolate sets, prepare the kawaii face elements from fondant. You'll need:

Eyes: Roll two small black fondant circles for the eyes. Add tiny white fondant dots for the shine. Use a small tool or toothpick to press in little curved lash lines above each eye.

Cheeks: Roll two small pink fondant ovals and flatten them gently for the rosy cheeks.

Smile: Roll a thin black fondant rope and curve it into a happy smile shape. Let all pieces dry on a flat surface for at least 30 minutes before placing on the cake.

💡 Can't find pre-colored black fondant? Mix regular fondant with black gel food coloring — knead it in thoroughly until you get a deep, even color.

Pipe the Star Tip Buttercream 🌟

Color your buttercream a bright, sunny yellow using yellow gel food coloring. Fill a piping bag fitted with a star tip (a 1M, 2D, or 4B tip all work beautifully). Starting from the bottom of the cake, pipe small stars or rosettes all over the outside — press, squeeze, and lift to create each little star.

Work your way up the cake in rows, covering the entire surface including the top. Leave a gap in the front center of the cake where you'll place the face, and leave the top of the cake clear for the chocolate leaves.

💡 Keep your piping bag perpendicular (straight up and down) to the cake surface for the neatest, most uniform stars. The more consistent your pressure, the better the texture!

Add the Green Sprinkle Border 🌿

While the buttercream is still soft, press green sprinkles all around the base of the cake to create a lush grass border. This grounds the pineapple and adds such a fun pop of color. Cup your hand and press the sprinkles gently but firmly into the buttercream for full coverage.

💡 Do this step right after piping while the buttercream is still fresh and sticky — the sprinkles will adhere much better!

Place the Fondant Face 😊

Now for the most fun part! Gently press your fondant face pieces onto the front of the cake — eyes, cheeks, and smile. Use a tiny dab of water or piping gel on the back of each piece to help them stick. Step back and adjust until the face looks just right. This is where your cake really comes to life!

💡 Place the eyes first to get the spacing right, then add the cheeks and smile below. Take a photo at this stage — it's already adorable!

Crown It with the Chocolate Leaves! 🍃

Take your chocolate leaf pieces and press them into the top center of the cake, arranging them so they fan outward and upward like a real pineapple top. Use a variety of sizes — taller pieces in the center, shorter ones around the outside. They'll stick right into the buttercream and hold beautifully.
